Re-Using Leftovers

As a college student, when it comes to breakfast, I tend to want something quick and easy to make. You can, therefore, understand why I am partial the English Muffins. While doing this blog, however, I have been able to find alternative recipes for leftovers that can not save time and money but also prevent food waste.

Ingredients

2 English muffins, split and lightly toasted
1/2 cup pesto sauce, grated or shredded Parmesan cheese

Directions

Preheat oven to 400 F.

1)   Place toasted English muffin halves on a baking sheet.

2)    Spread each half with pesto sauce.

3)    Sprinkle each muffin with Parmesan cheese.

4)   Bake for 5-10 minutes, until cheese is melted and beginsto brown.  Serve immediately.

Makes 4 pizzas.

If using a microwave, cook two halves for 30-second intervals until done. Cheese typically doesn’t do well for extended periods in the microwave; it can boil and harden, so be careful.
